2 oz Cachaca (Leblon)
3/4 oz Cointreau
3/4 oz demerara
4 strawberries
5 basil leaves
1/2 lime
1/4 oz balsamic vinegar

Muddle the strawberries alone violently!
Add the basil leaves and the lime juice and muddle
Add the remaining ingredients
shake with ice
strain over an ice filled glass; garnish with neatly sliced stawberry

Variation: Use raspberries instead of strawberries
Variation: Johns – add mint to the process with the basil and lime

2 oz light rum (Flor de Cana)
3/4 oz orgeat (almond demerara)
1/2 lime
1/2 oz Cointreau
Dark Rum (Myers, Goslings)

Shake all ingredients except the dark rum with ice
Pour all together into a tall collins glass
Float the dark rum on the top to give a nice color contrast
and a kick! This one is a sneaky cocktail . . .

Orgeat recipe:
1 cup raw sugar
1/2 cup water
2 tbs almond extract
Heat until the sugar is dissolved. store in the fridge

2 oz cognac (Remy VS)

Juice of 1/2 lemon (or a little less – half a lemon usually gives a little over 1 oz)

about 1 oz of simple syrup
1 oz of Cointreau
Shake (with little ice)
