3/4 Cointreau

1/2 Lime juice

1/4 oz Tamarind nectar

Tequila version:

2 demerara cubes

2 dashes Peach bitters

2 dashes Angostura bitters

2 oz Bourbon (original) or Tequila (variation)

dash of club soda

Rye version:

2 demerara cubes

muddle with 4 dashes Angostura bitters

3 oz Rye (e.g. Makers 46)

Decorate with orange peel, serve on the rocks – can add some soda if desired.

One of the “Classics” Dave suggests are almost better if the original liquor (Gin in this case) is substituted with Tequila:

3/4 oz of each:

– Lime juice

– Gin (original) OR Tequila

– Maraschino liquor

– Green Chartreuse

PerytonThis drink was created when looking to make a drink that combined Tequila and Strega for the Viceroy. After creating a lavender/agave syrup and combining it with those ingredients and some fresh lemon juice into a drink that all really liked, Dave asked his friend Tory what he thought he should call it. They were using the Cazadores tequila which has the picture of a stag on the label and since Strega means “the witch,” Tory instantly said, “Peryton” because he was familiar with a mythical animal by that name which has the head of a stag and the wings of an eagle.


3/4 oz Lavender agave syrup

2 oz Tequila

3/4 oz Licor Strega

Juice of 1/2 lemon

1/2 oz sweet Vermouth

2 dashes Orange bitters

Juice of about 1/4 orange

(originally done with blood oranges; orange bitters and normal oranges are substitutes)

Shake! Garnish with orange peel
