Cardamom
Cinnamon Bark
Vanilla bean
Maple syrup
Light Rum

Infuse for 5 days in a cool dry place
Shake the bottle each day
Press out to finish

Star anise – couple
5-6 cloves
1 tsp cinnamon bark
1 tsp orange peel
12 kernels coriander
1 lime peel no pith (removed after 3 days)
2/3 part 80 proof light rum
1/3 part simple syrup

Infuse for as long as it takes tasting frequently
Press out

Sugar
Water
Cinnamon Bark
Vanilla
Lemon
Cherries

Cook the above ingredients together on low simmer
Add 1 cup of rum and nutmeg to taste
Store in the refrigerator

Cut a strip of rind, light a match and hold it in your right hand over the drink and hold the orange rind in your left hand (with your index finter on the top end of the strip and your thumb on the bottom end of the strip) next to the lit match… bend the orange rind.. you should see a few sparks, then twist the rind into the drink….that’s it!
